What It Is

Cashmere is a fresh lactic goat’s curd—Main Ridge Dairy’s purest, softest cheese. Made entirely on-farm from the milk of their own herd, it’s slowly acidified over 18–24 hours with starter cultures before being gently hand-ladled into draining cloths. This slow-set, low-intervention process allows delicate flavour compounds and the milk’s natural sweetness to shine through.

It’s unpressed, unsalted until the final stage, and unaged—resulting in an impossibly light texture and a clean, citrus-bright flavour profile. Unlike whipped chèvre or commercial curds, Cashmere has no stabilisers, thickeners, or shortcuts. It’s simply milk, time, and touch.

Taste and Texture

Texture: Creamy, fluffy, lightly whipped by gravity—not machinery. Holds shape on a spoon but spreads like soft butter.

Flavour Profile:

  • Bright and tangy: natural lactic acidity

Cashmere is light, fresh, and mildly tangy—it works with herbs, fruit, and anything crisp or warm.

Savoury Pairings:
