Made entirely on-farm from the milk of their own herd, it’s slowly acidified over 18–24 hours with starter cultures before being gently hand-ladled into draining cloths. This slow-set, low-intervention process allows delicate flavour compounds and the milk’s natural sweetness to shine through.
