A silky cream layer demonstrating the fresh, clean flavours of the goat milk used just under the rind, gives way to a chalkier delightful centre. The ash layer was traditionally used to preserve the cheese between a morning and afternoon milking, but is now used as an iconic representation of the skill of the maker.
