This pungent, round washed rind cheese takes its name from a small village in the Pays d’Auge and was once the most popular cheese in Normandy. Livarot is a heady washed-rind cheese wrapped in five bands of rush raffia to help it retain shape during ripening. These strands earned Livarot its nickname,“The Colonel,” as the French military uniform of that rank features the same number of stripes.
Production is now controlled under AOC regulations and all cheese made from raw milk is bound with natural reeds whilst paper is used in the pasteurised version. The secret of this ancient cheese lies hidden beneath its thick leathery rind and the moist fudgy texture and rich condensed flavours have a distinct background of cured meats.
Pairs well with spicy Alsatian Riesling.
