The cheese is naturally cold smoked allowing the cheese flavour to really shine through in this complex cheese. The paprika brine adds a sweetness and further highlights the smokeyness.
Matching wine with smoked cheese is always a challenge. In the case of Sunsmoke we would steer clear of wine and instead pair with Wheat Bear or Pale Ale.
