In 2008 when Cornelius Cheese first began this was one of the first cheeses we stocked. A small wrinkly, goats cheese with a distinct odour of goat and fresh cut grass. A very traditional geotrichum ripened goats milk cheese. When ripe the skin will almost slip away, underneath a layer of creamy rich almost milk like paste thickening as you cut to the core or fudgey, sweet goat cream. Bright and alive with flavour, we're obviously fans of this cheese. As it ripens the cheese can attract mould from other cheeses leading to a delicate cap of blue and white moulds; these can all be eaten.
